NAINMO BARS
  • Melt 1/2 c. + 1 Tbl. butter & 2 oz. chocolate, Take off heat & add 1/3 C sugar, 1 egg, 1 c. oats, 1/2 C. nuts, 1 tsp vanilla, 1-1/2 C coconut. Press into 9"sq.
  • Mix 2 C P. sugar, 3 Tbl. butter, soft, 1/2 tsp. van. 2 1/2 Tbl. milk. Beat smooth.
  • Spread over oat mixt. chill 1/2 hour.
  • Melt 1 Tbl. butter w/2 oz. choc. Spread atop. Chill 4 hrs.
  • BABY RUTH NO-BAKE BARS
  • Heat in heavy pot: 1 C peanut butter, 1 C. Karo 1/2 C each br. & gran. sugar. Mix til smooth.
  • Combine: 6 C cornflakes, crushed, 1 C choco. chips, 3/4 C peanuts
  • Pour over P. butter mixt. Mix well. Press into buttered 9 X 13.
  • "STREUSELED APPLES"
  • Put in 8" pan: 6 c. sliced, peeled apples & 1/2 c. br. sugar,
  • Mix: 1/2 c. flour, 1/4 c. br. sugar, 1/2 c. oats, 1/4 c. butter, 1/2 tsp. cinn. til crumbly.
  • Sprinkle atop apples. Microwave at high, 12-15 min. Let stand few min. b4 serving.
  • "RASPBERRY PIE"
  • 1/2 cup sugar
  • 3 Tbl flour
  • 5 cups berries
  • Combine sugar, flour. Add berries. Mix till berries are well-coated. Let sit 15 min.
    Roll out crust finish as other 2 crust pies. Bake 375 with edges covered w/ foil for 25 min.
    Remove foil, bake 20/25 min. longer or till golden.
  • "Beve's Oatmeal cookies"
  • 1 CUP MARGARINE OR SHORTENING
  • 1 CUP PACKED BROWN SUGAR
  • 3/4 CUP GRANULATED SUGAR
  • 1 EGG
  • 3 CUPS OATMEAL
  • 1 CUP NUTS
  • 1 TSP. VANILLA
  • 1 2/2 CUPS FLOUR
  • 1 TSP. B. SODA
  • 1 TSP. CINNAMON
  • 1 TSP. SALT

    Mix well with mixer. (batter will be stiff).
    Drop onto greased bakng sheets. Bake 375 , 8 to 10 min.

  • "Super" meringue
  • 1/2 cup water
  • 1 Tbls. cornstarch
  • Combine these two. Stir till dissolved. Cook till thick. Cool slightly.
  • Beat together: 3 egg whites
  • dash salt till foamy.
  • Add Cornstarch mixture. Beat well. Add 6 Tbls. sugar, gradually. Add 1 tsp. vanilla while this is beating. Beat till smooth....
  • "Blackberry Buckle"
  • 1 1/4 cup flour
  • 1/2 cup sugar
  • 1 1/2 tsp. b.powder
  • 1/4 tsp. salt
  • 1/2 cup (1 stick) margarine
  • 1/3 cup milk
  • 1/2 tsp. vanilla
  • 1 egg.

    Mix all together. Spread in ungreased 8 x 8 pan.

    Make crumb topping thus:

  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup (1/2 stick) butter or margarine, softened.

    Mix all till crumbly. Sprinkle the prepared batter with 1 1/2 cups fresh or frozen berries (thawed, well drained).

  • Bake 45 to 50 min. or till golden brown. Use toothpick or raw spaghetti to test for doneness.
  • "PUMPKIN LOAF"
  • Cream together with mixer:
  • 2 cups canned pumpkin
  • 2/3 cup soft oleo
  • 2 3/4 cup sugar
  • 3 eggs
  • ( Use a spoon to mix dry ingredients with the wet)
  • Add together:
  • 3 1/3 cup flour
  • 1/2 tsp. b. soda
  • 1 1/2 tsp. salt
  • Mix well. Add 2/3 cup water
  • 1 1/2 tsp. vanilla. Pour into greased loaf pans. Bake 350 for 50/60 min.
  • Basic meringue
  • Beat: 3 large egg whites till foamy
  • Add 1/4 tsp. cream of tartar , till soft peaks appear
  • Beat in: 6 Tbls. sugar (1 tbls at a time). Con't beating till peaks are stiff and shiny.
  • Banana oatmeal cookies
  • 2 C. flour
  • 1 tsp. each cinnamon and baking powder
  • 1 1/2 tsp. salt
  • 1/4 tsp. b. soda
  • 1 C. granulated sugar
  • 2 eggs
  • 1 C. shortening
  • 1 C. bananas, mashed.
  • 1 C. choco.chips
  • 1/2 C. nuts (your choice) chopt.
  • 2 C. oats
  • Combine shortening, eggs , sugar; blend well. Add bananas.
  • To this mixture, add cinn, salt, baking powder, b. soda. Mix well.
  • Add flour 1 cup at a time. Add chips and nuts. Blend well, add oatmeal. Bake 375°, 10-12 min. or til light brown.
  • Do not overbake. These cookies are very moist and freeze well.
  • Orange cake
  • Cream together: 4 Tbl. oleo with 1 cup sugar w/ 1 egg..
  • Add 1 Tbl. grated orange rind. Beat well.
  • Add 1 1/2 c.flour
  • 1 1/2 tsp. b. powder Blend well. Add 1/4 c. milk
  • 1/2 c, O.J. Blend well.Pour into greased pan/pans.
    Beat: 1 egg white til foamy. Gradually add, 1/4 c. sugar. Beat til stiff.
    Spread onto batter, sprinkle with ground nuts. Bake at 350, about 25 min.
  • Nut Macaroons
  • 2 c. powdered sugar
  • 2 c. nuts
  • 4 unbeaten egg whites
  • 2 Tbl. flour
  • 1 3/4 tsp. b.powder Mix till well blended. Cover baking sheet with waxed paper.
    Dip spoon in cold water, drop onto paper 1" apart. Wet spoon each time. Bake 350, about 12 min.
  • "T. J. fingers"
  • In saucepan, melt 2 sticks butter.
  • Add 1/2 c. white sugar. Stir, let come to a boil, then cook 2 minutes.
    Add 1/2 to 1 tsp. vanilla.
  • While this is cooking, prepare pan: Spray a jelly-roll pan, line with foil.
    Make sure there's no holes in the foil.
  • Line the foil with a layer of saltine crackers.
    Fill the pan completely. (Break apart some crackers to make fit, if need be).
  • Very carefully pour the cooked syrup over the saltines. (syrup is VERY HOT)
  • Bake in preheated 350 F. oven for 10 minutes.
  • Remove from oven: Sprinkle chocolate chips over all, wait a few minutes so as to melt the chips, then spread evenly.
    Sprinkle with ground nuts of your choice. When cool, cut into squares.

  • Beves' Yummy squares
  • Spray a 13 x 9 pan. Preheat oven to 375.
  • Combine: 3 c. flour, 1 1/2 c. sugar, 1 tsp. baking powder, 1/2 tsp. salt.
  • Add this to a mixture of: 1 c. margarine, 2 eggs, 1/2 tsp. vanilla.
  • FILLING: Melt in microwave; 2 c. chocolate chips. Add 2/3 c. milk, 8 oz. cream cheese. Mix well.
  • Add 1 tsp. vanilla, 1 c. chopped nuts (optional).
    Bake 375 approx. 30 min.or til toothpick comes out clean.
  • Easy banana bread
  • Cream: 1/2 c. marg., 1 c. sugar...ADD: 2 eggs, beat till fluffy.
  • MASH:2 ripe bananas with 1 tsp. lemon juice. BLEND INTO 1st mixture.
  • ADD: a mix of, 2 c. flour,3 tsp. B.powder, 1/2 tsp. salt. STIR till just blended.
  • ADD: 1 c. nuts. Use sprayed loaf pan, BAKE 375, 1 to 1 hr. 15 min.
  • Banana Nut Crumb Cake
  • Combine: 1 box banana/yellow cake mix, 1 c. water, 1/4 c. unsweet applesauce, 2 large egg whites
  • Stir about 50 strokes w/ spoon til moistened; pour into sprayed 8" sq. pan.
  • Comb: 1 large banana, ripe, mashed, 1/2 c. quick oats, 1/2 c. brown sugar, 1/4 c. nuts
  • mix well; drop by tsp's. over cake batter. Bake in 8" sq. 375, til center is puffed -n- set, about 30 min. Cool about 20 min. b4 cutting
