"Some really nice recipes"

    "NO FLOUR-COOKIES"
  • 1 c. gran. sugar
  • 1 large egg 1 c. peanut butter (smooth-or-crunchy)
  • 1 tsp.vanilla
  • Combine all: Make 1" balls, put on ungreased sheet. Bake preheated 350¹ oven approx. 8 min. Put a Hershey-kiss in center immediately upon removing from oven.
  • Cool before removing from pan.(these taste like a Reeses-cup!!)
    "Delicious Dirt"
  • Crush in processer: about 1/2 pkg.Oreo cookies. Set aside for later
  • Beat w/mixer: 2 (8oz.pkg's) cream cheese, 2 c. powdered sugar. Beat well.
  • In separate bowl mix together: 2 small pkgs. vanilla instant pudding, 3 c. cold milk. Mix about 1-1 1/2 min.
  • Add cream cheese mixture to this. Mix well.Fold in 16 oz.cool whip, 2 tsp. vanilla.
  • Put a layer of cookies in bowl. Add pudding mixture. Repeat layering till all is used up, end w/cooky's
    NOTE: This may be halved (it makes a lot!!)You may also use no-fat or lo-fat ingredients.
    "Hot fudge cake"
  • Combine in bowl: 1 c. flour, 3/4 c. gran. sugar, 2 Tbl. cocoa powder, 2 tsp.b. powder, 1/4 tsp.salt.
    Stir in: 1/2 c. milk,2 Tbl.oil, 1 tsp.vanilla. Spread into "ungreased" 9" sq.pan.
  • Combine: 1 c. brown sugar w/4 Tbl.cocoa powder....Sprinkle this over batter just made.
  • Pour 1 & 3/4 c. "hot" water over all. DO NOT STIR!! Bake at 350• for 35-40 min. Serve warm
    Ladle fudge sauce over servings
    "Quick lo-fat BROWNIES"
  • Combine: 1 box brownie mix (buy cheapest) with 1 c. no-fat yogurt (vanilla or plain)...Spread in 8x8 in. sprayed pan. Bake 350, 25-30 min.
    Use toothpick to test for doneness. May be doubled (2 boxes mix & 2 c. yogurt) BUT add 1/4 c. or less of milk if needed & use 9x13" pan
    NOTE: No need to buy lo-fat mix cause the yogurt replaces the oil, egg & water called for in the mix.
    "Watergate Salad"
  • Combine: 1 can (20 oz.)crushed pineapple››››››(juice and all) with 1 small pkg.instant pistachio pudding.
  • Add 1 1/2 c. miniature marshmallows, 8oz. cool-whip, 1/2 c. maraschino cherries (cut-up). Chill in frig. til set.
    Chocolate earthquake Cake
  • Cover bottom 9x13 sprayed pan w/1 c. chopt nuts; 1 small pkg. coconut....Prepare 1 box German chocolate cake mix according to directions....Pour this batter on top of coconut.
  • Melt 1/2 c. margarine.. Add 8oz. cream cheese, 1 pd. powdered sugar...Blend well. Spoon over unbaked batter; Bake 350, 40-42 min.
    NOTE: You cannot test for doneness, as the cake will appear sticky even when done. The "icing" sinks into the batter, forming a white ribbon inside.
    "No-bake chocolate cheesecake"
  • Melt: 1 1/2 c. chocolate chips in microwave; for 1 to 1 1/2 min. then cool about 5 min.
    While thats cooling, beat together: 1 (8oz.)AND 1 (3 oz) pkg's of cream cheese, 1/4 c. soft margerine, 1/2 c. gran. sugar. Beat w/mixer til smooth (low-speed)
  • Blend in the cooled chocolate. Blend well...Fold in 2 c.(8oz.container) cool-whip, thawed. Spoon into ready -made crust. Chill about 4 hrs.
    "Creamy Orange Pie"
  • Beat: 8oz.cream cheese till fluffy. Gradually add 14 oz.can of "eagle brand" milk (not evaporated) and 6oz. THAWED orange-juice CONCENTRATE...Beat w/mixer til smooth...Fold in 8oz. container cool-whip...Spread into ready-made crust. Freeze or chill.(very refreshing !)
    "Mayonnaise cake (very dark & moist)"
  • Mix together these ingredients one-by-one: 2 c. flour, 2 tsp. b. soda, 1 c. gran.sugar, 1/2 c. cocoa powder, 1 c. mayo, 1 c. "boiling" water,& 1 tsp.vanilla.
  • Beat w/mixer till well blended, "don't overmix".. Pour into sprayed 9x13 pan. Bake: 350, 30/35 min. test w/ toothpick for doneness.
    NOTE:the batter may seem thin but it'll be o.k....
    "Chocolate Frosting"
  • Combine: 1/2 c. cocoa powder, 1 c. gran. sugar, 1/4 c. milk, 1/4 c. margarine.
  • Bring to boil in pan. Boil 2 or 3 min....Remove from heat.Cool slightly and beat w/mixer til spreadable.
    This is very easy and very good.
    "Lo-fat chocolate oatmeal cooky"
  • Beat with mixer;.. 1 egg, 1/2 c. gran. sugar, 1/4 c. oil, 3/4 c. brown sugar, 1/4 c. lo-or-no-fat yogurt, 2 tsp. vanilla, 1 c. quick oats that has been soaked in 1 c. boiling water, 1/2 c. cocoa powder, 1 1/8 c.flour , 1/2 tsp.EACH b. soda & b. powder, 1/4 tsp.salt (optional).
  • Drop by tsp.on sprayed cooky pan...Bake 350, 7-9 min.
    To make your own sweetened condensed milk (eagle brand)
  • Mix together; 1 c. non-fat dry milk powder, 2/3 c. sugar, 3 Tbl .melted oleo, 1/3 c. boiling water.
  • Blend with mixer. This equals 1 can.
    "New Banana Bread"
  • Combine: 1 3/4 c. flour, 1 tsp. b. powder, 1/4 tsp.EACH b. soda and salt. Mash 3 small bananas with 1/3 c. apple-sauce, 2 egg whites, 1 whole egg Stir this mixture into dry ingredients JUST TILL MOISTENED. Put in sprayed loaf pan, sprinkle w/1/4 c. ground-or-chopt nuts. Bake 350, 40/45 min...Test w/toothpick.Cool 10 min.
    "Hint"
  • Use 2 Tbl. lite Karo syryp instead of oil or apple -sauce for lo-fat baking.
    "Chocolate eclair dessert"
  • Mix: 1 large pkg.instant vanilla pudding as directed:...Add 1 (8oz.)container cool-whip.
  • In rectangle dish or pan, put a layer of graham crackers, then pudding, then crackers again til almost full.
    Ice last layer crackers w/chocolate icing. Put last iced layer on top. Refrigerate at least 4 hrs.
    NOTE: I usually slice a banana in between layers also, makes xtra tasty.
    I also leave off the last iced layer of grahams sometimes..
    "Cherry Trifle"
  • Mix together; 8oz. softened cream cheese w/1 c. powdered sugar...Mix well...Add diced lo-fat pound cake...Mix well
  • Layer this mixture w/1 can cherry pie filling in a large, deep bowl. Sprinkle w/chopt nuts. Refrigerate
    "Chocolate cheesecake"
  • Mix 1 small box pudding mix & 3/4 c. milk tog. Set aside.
    Whip 8 oz. cream cheese until smooth. Add to pudding mixture until smooth, pour into graham or cooky -crust.(homemade or bought)
    Refrigerate until firm. Top with either, whipped cream or chocolate chips.
    "Orange walnut jumbles"
  • Mix together: 2 c. flour, 1 tsp. b. powder, 1/4 tsp.salt, set aside....Cream together: 1/2 c. unsalted butter (room temp.) see note. with 1 c. gran. sugar, 1/2 c. sour cream (or yogurt). Mix well...
  • Add: 1/2 Tbl.orange extract, 1 Tbl.orange zest, [optional}. Add dry ingredients slowly, mix well.
    Add 3/4 c. chopt nuts,if desired.
  • NOTE: if using salted butter {-DO NOT add salt to dry ingredients-}
  • Roll into a log. Refrigerate at least 1 hour...Then cut into 1/4" slices...Put a lollipop stick in before baking, if desired.
    Bake 375°, 10 to 12 min.....Dip 1/2 of cooky in melted chocolate. (optional).Nice cooky for parties/holidays.
    "Green tomato chocolate cake"
  • In processer, puree green tomatoes till you get 1 cup...Cream together: 2/3 c. margarine, 1 3/4 c. gran. sugar, 2 eggs, 4 oz. melted chocolate, 1 tsp.vanilla.
  • In separate bowl combine: 2 1/2 c. flour, 1/2 c. cocoa powder, 2 tsp.EACH b. powder & b. soda, 1/4 tsp. salt.
  • To the creamed mixture add: 1/2 of the dry ingredients & all the puree. Mix. Then add rest of dry & 1 c. beer... (batter will be "thick")...Put in 2 (9") sprayed cake pans-or-9x13 pan.
    Bake: 350, 30/35 min. or til tested done w/toothpick...Frost w/ chocolate icing.
    "Impossible chocolate pie"
  • Mix together: 2 eggs, 1 c. milk, 1/4 c. butter-or- margarine, 1 tsp.vanilla, 2oz.melted chocolate, 1 c. brown sugar, 1/2 c. Bisquick. Put in 8"/9" pie-or-cake pan. Bake 30 min. at 350.
    Use knife to test for doneness.
