Apple Goodie

  • Mix 7 c. apples, peeled - sliced, w/ 1 1/2 c. sugar, 2 tsp. cinn.
  • Put in greased 9x13 dish.
    Pour a 3 oz. pkg. dry instant pudding on top of apples.
  • MIX: 1 c. EACH sugar & flour, 1/2 c. EACH milk, oil, 1 egg. Pour this over pudding- apples. Bake 30 min. 350
     
     

    Onion-cheese dip

  • Saute 3 vidalia onions in 2 Tbl. butter.
  • Add 2 c. cheddar cheese(8oz.), 1 c. mayo, 1/2 tsp. hot sauce, 1 clove garlic.
  • Mix well.
  • Bake 375F. for 20-25 minutes or til hot/bubbly.
     
     

    Dinner Rolls (25-30 rolls)

  • STIR: 1 1/4 c. warm milk, 1/3 c. sugar, 2 tsp. salt, 4 Tbl. butter, soft
  • Sprinkle on 1 Tbl. yeast; stir, let stand to dissolve. Add 1 egg, slightly beaten & 2 c. flour, beat vigorously 1-2 min. then add enough flour (1 1/2 c. ?) for a manageable dough.
  • Knead about 6-8 min. til smooth - elastic. Cover, rise til doubled.
    Punch down; form 24 balls.
  • Put balls, touching in 2 greased 8 - 9" cake pans. Brush w/ melted butter. Cover, rise.
  • Bake 350 about 30-35 min. or tops a deep golden brown. ..
  • NOTE: original recipe said bake 4250, 15 min. You may have trouble with them browning too much before they were baked thorughly, so feel free to use the above changes in bake time/temp.
     
     

    BAKED CORN

  • MELT 1/2 c. butter in 2 qt bake dish. Blend in 2 cans cream-style corn, 6 Tbl brown sugar, 2 eggs beaten
  • Bake 325, 2 1/2 to 3 hrs. Top with buttered crumbs the last 20 min.
     
     

    No-bake lasagne

  • COOK 8 lasagne noodles, drain. Return to pot.
  • WHILE NOODLES ARE COOKING: Saute in 2 tsp. veg. oil: 1/4 pd. mushrooms, sliced & 1 med. chopt onion till golden.
  • STIR IN: 1 med. tomato, diced; 1/2 of a 15 oz. jar marinara sauce (or your own homemade) (abot 3/4 cup), and 1/2 tsp. dried basil or 2 tsp. fresh. HEAT thoroughly.
  • ADD to noodles, toss to coat.
  • ARRANGE 2 noodles on plate, top with sauce. Sprinkle on salt-n-pepper and lo-fat parm. cheese.
  • Serves 4: About 310 calories, 5 g. fat.
     
     

    Corn casserole

  • Comb: 3 well-beaten eggs, 1/4 c. flour, 2 tbl. sugar; Beat well.
  • ADD; 6 oz. sharp cheese, shredded, 2 cans whole kernel corn, drained Cook, drain, crumble: 10 slices bacon, crisp (reserve 1/4 for topping);
  • Mix well. Pour into 10x6 bake dish. Sprinkle remaining bacon on top. Bake 350, about 30 min. or use toothpick to test.
  • NOTE: May double this recipe, bake in 9x13 glass Pyrex dish, and bake just a little longer. It should be cooked well enough that you can serve it in squares
     
     

    Italian Angel Food

  • Slice thin, use as base for strawberry shortcake or plain w/ fruit
  • ¾ c. warm water, 3 large egg whites 6 tbsp fruity olive oil or melted butter, 4 tbl sugar, 1/4 tsp salt, 3 c. flour, 1 1/2 to 2 tbl. yeast Use WHITE Bread mode.
